Birthday Meal Plan— Some of my favorite foods!

Pizza Dip – (I took this off a box of crackers that someone brought to a meeting!)

Ingredients:

1 block of cream cheese

1/2 cup pizza sauce

1/4 chopped green pepper

1/4 chopped onion

1/4 black olives

1/2 cup of cheese

Directions: Preheat the oven to 350 degrees. Mix cream cheese and pizza sauce spread out on the bottom of a pie plate or casserole dish (something that can go into the oven) top with green peppers, onion, black olives and cheese. Bake for 5-8 minutes or until cheese is melted on top. Serve warm with crackers

Italian Style Stuffed Green Peppers – I found these on The Foodie and The Fix. They are healthy and awesome!

Chicken Pasta Bake – Can you tell it’s getting colder! I’m totally into warm cheesy comfort foods right now. Maybe it has something to do with me turning 30. 🙂 Joyously Domestic did a great job with this meal!

Red Velvet Poke Cake – Everyone needs cake on their birthday!

1 Red Velvet Cake Mix

1 Bottle of Chocolate Syrup

Homemade Coconut Frosting (See Below)

Directions: Mix up cake mix as instructed on the box with one exception. Replace the one cup of water with 1/2 cup of water and 1/2 cup of milk. (To make it moist) Bake the cake how you would like. I love to rounds, but this would work with any shape of cake. Let the cake cool.

Once the cake has cooled if you are layering place a layer of frosting between the cake layers. Then take the non spoon end of the wooden spoon and poke holes in the cake. The fill the holes with chocolate syrup. Then frost with the Coconut Frosting and enjoy! Warning – You will most likely need a glass of milk.

Homemade Coconut Frosting

3/4 cup shortening

4 cups powdered sugar

1 tsp coconut extract

1/4 unsweetened coconut

2 TBSP milk

In or with a mixer mix all wet ingredients together and slowly add the powdered sugar. After the frosting is made fold in the coconut. Enjoy on graham cracker or the Red Velvet Poke Cake!
