I love root veggies! Of course potatoes and sweet potatoes have their spot on your Thanksgiving table, but have you thought about adding some more? I love adding beets and rutabaga’s and here are some of my favorite ways to use them.
Easy Beet Dip
Scrub your beets, wrap them in foil, bake in the oven until cooked through then mix them up with yogurt, garlic, cumin and salt for an amazing dip. Serve with Crackers or Pretzels

Beet and Rutabaga Hash
Wash and peel 3 beets, 1 small-med rutabaga, 2 potatoes and one onion
Diced your beets, rutabaga, potato and onion.
Place veggies in a pan with 1 cup water and 2 tbsp olive oil
Heat everything in pan until cooked and water evaporated. – It may help to cover the pan while cooking. Serve warm
