Moroccan Wife Fail Friday

So here is what went down… I wanted to make lentils.  Hdubs like Moroccan lentils and I love them. To make Moroccan lentils you really should use a pressure cooker… if you use a stove top pot they might not turn out the same.

Now because I am alwasy trying to be the best Moroccan wife that I can be not only do I have a nice metal pressure cooker (the kind that would make my mother in law proud) but I just got a microwaveable pressure cooker! It’s pretty much amazing!

So in case you need a quick dinner or a Moroccan Wife WIN here is the recipe that I used! 🙂

Moroccan Lentil Stew

INGREDIENTS
  • 1 cup brown or green lentils
  • 1 14 oz can of diced tomatoes
  • 1 medium onion, chopped
  • 3 to 5 cloves of garlic or two tbsp pre-chopped garlic
  • 2  tablespoons cumin
  • 2 1/2 teaspoons paprika
  • 2 teaspoons ginger
  • 1/2 teaspoon pepper
  • 2 teaspoons salt, or to taste
  • 1/3 cup olive oil
  • 30 oz of water

Mix all ingredients in pressure cooker. Close tight and place in Microwave for 30 mins. Really good with fresh rolls! 🙂
