I love zucchini! I think it’s one of the best veggies out there and I frequently trick H-dubs into eating it.
Goulash is one of the favorite recipes in our house (don’t worry I’ll share in the next post.) and I frequently add zucchini. However regardless of the sneaky was that I try and fir more veggies in to our weekly meal plan, sometime I just have to leave them out in the open. Here is our my favorite zucchini dish.
Zucchini Boats
Ingredients
1 lb hamburger
1/2 tsp paprika
1/2 tsp ginger
1/2 salt
1/2 cumin
1 med onion chopped
3 med-large zucchini
one med-large chopped carrot (I like to chop mine small so they cook faster)
2 tomatoes chopped (juice, seeds and all)
1 tablespoon cornstarch
shredded mozzarella cheese (only if you want)
Preheat the oven to 375 degrees. Cut the zucchini in half hot dog style (Remember I work in an elementary school!) Scoop out the middle so you have a nice big area to stuff later. In a large skillet put your hamburger, onion, spices, carrot, tomatoes and the inside of the zucchini. Cook until the veggies are tender and the hamburger is brown usually about 10 min or so on med-low. Once everything has cooked through take a good look at your pan, if it’s soupy add in the cornstarch to strengthen the mixture a little but. Sometimes I have to add it and some times I don’t. Once that is done place your zucchini in a greased casserole pan and fill them with equal amounts of filling, sprinkle cheese over the top and cover with foil. Bake zucchini for 25 mins or until zucchini is cooked through.
